The Infamous Mac N Cheese
This is the baseline for the world of Mac&Cheeses. Start here, and build your own beautiful adventure.
INGREDIENTS
4 cups Macaroni of Choice
Salt
Water
2 tbsp Butter
1/4 tsp mustard powder
2 tbsp flour
2 cups whole milk (whole makes a big difference)
1/2 cup extra old cheddar
1/2 cup Brie
1/2 cup Velveta, cubed
1/2 cup Gruyere
4 tbsp Parmesan
METHOD
Boil your pasta as per instructions on the box. Make sure your water is SEASONED nicely with salt. When finished cooking, rinse thoroughly with cold water so noodles do not clump together.
Grate hard cheeses, and cube soft. If you’re buying pre-grated cheese, please stop.
Melt butter in a heavy-bottomed pot (enamelled cast iron is our favourite here) over medium heat. When melted, add mustard powder and flour, whisking until combined, cook until very slightly golden in colour, continuing to whisk so it doesn’t burn.
Add milk, and whisk to combine, bring to a boil, stirring still. When the milk starts to froth, turn off the heat and add cheeses, stirring between each addition.
Add noodles, taste, and season to your liking with salt and pepper.
